Ingredients
250 g atta/chapatti flour or wholemeal flour
Pinch of salt
1 tbsp coconut oil
1 tsp cinnamon powder
50 g jaggery or brown sugar
2 ripe bananas
150 ml coconut milk
Rice flour for dusting
Method
Sift the flour and salt together in a bowl
Add the coconut oil, cinnamon powder, jaggery and break in the bananas.
Use your hands to form a crumb like mixture.
Now add the coconut milk to form a dough.
Knead until smooth and elastic. This takes about 7 minutes.
Divide the dough evenly into 8-10 balls.
Use a rolling pin to roll the dough into flat discs, then sprinkle each one with rice flour so that they don’t stick to each other as you are creating a pile of them.
Heat a heavy based frying pan over a medium heat.
Fry the disks for 1 minute on each side, basting with a little coconut oil
