FEMALE CHEF, AUTHOR AND MASTER OF INDIAN CUISINE

Female Chef Anjula Devi is best known for her extensive knowledge of spices, creating delicious authentic Indian cuisine. A respected food writer and author, Anjula started cooking with her father at the age of eight. At that time the ingredients for Indian cuisine were not as readily available as they are now and Anjula travelled on the number 207 bus with her father to Shepherd’s Bush Market where they would buy a selection of spices, fresh fish and Indian vegetables. ​​

Here’s a great little recipe for easy peasy Tamarind potatoes.....

Serves 4
 
Ingredients
600 g Maris Piper potatoes, cut into large chunks
2 tbsp vegetable oil
4 cloves garlic, minced
2 tbs tamarind paste
3 tbs sundried tomato paste 
1 tsp turmeric powder
1 tsp red chilli flakes
1 tsp grated jaggery (unrefined sugarcane)
1 tsp roasted and crushed cumin seeds
1 tsp roasted and crushed coriander seeds
1 medium size brown onion, finely chopped
200 ml water
30 g fresh coriander, chopped 
 
 
Method
Pre heat the oven to 200 degrees
Leaving the chopped coriander out, place all the ingredients in a large roasting tin and mix thoroughly 
Place the potatoes in the pre heated oven for 25 minutes, then remove from the oven and stir well Place the potatoes back in the oven until they are cooked all the way through (about another 15 minutes)
Sprinkle the fresh coriander onto the potatoes and stir well
Enjoy!
